Delicious Menu Ideas For Outdoor Barbecues This Spring

And while we’re not suggesting that you fly over to Cancun and enjoy spring break there with college students from all over, we still insist that you celebrate this wonderful season by hosting BBQ parties for loved ones and friends. Why not? The best way to celebrate is through great food with the company you care about! So to help you serve the best-tasting and spring-compatible dishes for your outdoor barbecues, we’re writing this blog post to give you some great suggestions!

 

Appetizer: Grilled Jalapenos

 

Slice the peppers in half then stuff them with whipped cream cheese, bacon (to add a meaty taste) and quick-melt cheese. Top them with cilantro sauce and then grill for a few minutes until the peppers are well-cooked.

 

Salad: Avocado, Fennel & Grapefruit Salad with Grilled Shrimp

 

This salad represents the green color of spring! And to add a dash of reddish color, don’t forget your shrimps! Combine avocado, cilantro leaves, fennel seeds, lettuce, grapefruit and grilled shrimps in a bowl. Flavor it with vinaigrette made from grapefruit juice, lime juice, salt, fennel seeds, pepper, shallot and oil. Sprinkle with the feta if preferred.

 

Side Dish: Grilled Ratatouille

 

Now the Grilled Ratatouille adds more life to your menu! It’s a combination of grilled tomatoes, zucchini, eggplant, onion, bell peppers and squash, flavored by vinaigrette made from garlic, vinegar, basil, thyme, salt and pepper.

 

Main Course: Jerk Pork Tenderloin with Pineapple-Jicama Salsa

 

The entourage won’t be as mouth-watering if you won’t come up with a memorable main dish! Prepare your pork tenderloin and marinate it in a puree of scallions, soy sauce, brown sugar, black pepper, garlic, allspice, nutmeg, chiles, ginger and lime juice. Grill it in low heat and season with salt and pepper to taste. Serve with a pineapple-jicama salsa!

 

Dessert: Watermelon Pops

 

We can’t forget about dessert, can we? Deseed the watermelon and blend it together with vanilla extract, rosewater and lime juice. Pour the mixture into Popsicle trays and leave in the freezer for about three to four hours. Defrost for 5 minutes before serving this to your guests.
