Let’s skip the all-spicy Cuban flavor for a while and let your children enjoy a sugary zest just for fun! So we browsed the internet in search of a mouth-watering sweet ribs recipe and we believe we found one worth cooking! Here’s a detailed guide for your reference:

Ingredients:

 

  • ¼ cup salt
  • ¼ cup white sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons ground black pepper
  • 2 tablespoons ground white pepper
  • 2 tablespoons onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 10 pounds baby back ribs
  • 1 cup apple juice
  • ¼ cup brown sugar
  • ¼ cup barbecue sauce

 

Procedure:

 

1. Mix the salt, white sugar, brown sugar, black pepper, white pepper, onion powder, garlic powder, chili powder, paprika and cumin to make your dry rub. Once all the said ingredients are evenly stirred together, rub the mixture onto the baby back ribs. Ensure that all areas are well-covered and leave nothing unflavored.

 

2. Get a plastic wrap and use it to wrap the ribs. Make sure all sides are sealed tight then refrigerate the meat. You can leave it in the fridge for at least 30 minutes before cooking but it will be more flavorful if you’ll let the rub sink into the meat overnight.

 

3. Place the ribs on the rack with the bone side facing up then put it in the box. Cover your La Caja China roaster with the ash pan and charcoal grid.

 

4. Add 16 pounds (for La Caja China model #1) or 18 pounds (for La Caja China model #2) of charcoal and light them up. Once lit, spread the coals evenly over the charcoal grid. Place a bowl of apple, pear, grape or cherry chips for smoking. You may also use the La Caja China smoker if you have one. Bring the temperature to 225 degrees and let the smoking commence for an hour.

 

5. While waiting for the ribs, combine the apple juice, brown sugar and your barbecue sauce in one container. Stir them well. Once you’ve smoked your ribs, remove the chips carefully from the box and add another 9 pounds of charcoal.

 

6. Now let’s barbecue! Brush one side of the ribs with the mixture and let it cook for 5 minutes. After 5 minutes, turn it on the other side and brush with the sauce again. Do this twice or thrice on both sides until the meat is no longer pink.

 

7. Depending on the cut of your ribs, the cooking time may last for about 3 to 4 hours. Brush the meat once again 30 minutes prior to taking the ribs out of the grill. Once done, wrap them with aluminum foil and let it sit for 10 to 15 minutes before serving.
